1 Zucchini
1 Cup Cherry Tomatoes
1 Tsp Dried Oregano

Heat olive oil in a large skillet over medium-high heat.
Add the onion and garlic, cooking for 2-3 minutes until softened.
Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
Stir in the red bell pepper and zucchini, cooking for 3-4 minutes until tender.
Add the cherry tonatoes, oregano cumin, salt and pepper.
Cook for 2-3 more minutes letting the flavors meld.
Remove from heat, garnish with fresh parsley ad crumbled feta (if using), and serve warm..
